UA Food Science Team Wins Second in Danisco Competition

Danisco AwardThe University of Arkansas department of food science product development team won second place in the Danisco Knowledge Award Competition. The team members, which include Ashley Espinoza, Jeana Monrad, Fernanda Onofre and Brittany White, created a line of shelf-stable savory muffin mixes that allow consumers to add water, butter and eggs to prepare at home.  The team won $5000 and will be traveling to Scottsdale, AZ to accept the award for their 'Fab J's Savory Muffin Mixes "Potato and Prosciutto"' at the New Product Development Meeting.
 


Students Complete Masterfoods Summer Research Internship

Masterfoods Students

Three visiting undergraduate students have recently completed their summer research internship at the Department of Food Science as part of the Masterfoods/IFT Mars Scholars Project.
 
Ketera White from Prairie View A&M University in Texas worked with Dr. Phil Crandall on "The Effects of time on the survival of Listeria monocytogenes inoculated onto environmental sampling sponges, stored at 40°F.

Miao Zhao from Oregon State University worked with Dr. Steven Ricke on "The effect of probiotic bacteria on selected human pathogens."

DeNetra Griffin from Southern University and Agricultural & Mechanical College in Baton Rouge, LA worked with Dr. Navam Hettiarachchy on "Total phenolics and anti-oxidant activities of extracts derived from heat-stabilized defatted rice bran using phoshoric acid."
