Preface
The Mysterious World of Food Science is the first publication of a multifaceted lab manual. We hope this manual will provide teachers with a multitude of ideas for incorporating "hands-on" and "inquiry-based" science. Additionally, we hope to inform teachers of what Food Science is all about.
The main objective of the Food Science Department at the University of Arkansas is to stimulate student interest in the field of food science. Many students may not realize the options available to them as they enter the field of food science. Therefore, we have included an overview of careers in the field of Food Science as well as some laboratory experiments based on the chemistry of foods.
We hope to accomplish this objective by providing you with laboratory experiments that are both economical and user friendly. It is our intention to expose students to practical applications of biology and chemistry. Most of the experimental procedures have been simplified so that ninth grade students can perform the labs. Some, however, may not be appropriate for that level. In order to make the experiments enticing to upper level instructors we have included extension exercises when applicable.
