Course Description
Two types
of certification are offered in this course and the length of training varies
with the type of certification being sought. All course participants complete
the Acidified Food Certification portion of the course. Those wishing to also
obtain Low-Acid Certification complete an additional 1.5 days of training.
Acidified
Food Certification (length = 2 days)
Day 1 -
Introduction to FDA regulations, microbiology, container handling, food plant
sanitation, and record keeping.
Day 2 -
Glass closure evaluation, theory of thermal processing, instrumentation, and
acidified foods.
Acidified
and Low-Acid Food Certification (length = 3 days)
Days 1-3 -
Detailed discussions of the various thermal processing systems and metal
closure evaluation.

Classes
begin at 8:00 a.m. each day. Following each lecture there will be a brief
study period and time for questions. Exams will be given immediately after
the study session. |

The course is taught by faculty from
the Institute of Food Science and Engineering, University of Arkansas.
Additional course instruction is provided by consultants and professors from
Oklahoma State University and the University of Missouri
Course
Location
All classes will be held at the
University of Arkansas Student Union Building. You will need to park in garage so send me your address so I can arrange to have a special parking permit sent to you.
There are numerous hotels in the area. We cannot recommend one hotel over another.
