Course Description

    Two types of certification are offered in this course and the length of training varies with the type of certification being sought.  All course participants complete the Acidified Food Certification portion of the course. Those wishing to also obtain Low-Acid Certification complete an additional 1.5 days of training.

Acidified Food Certification (length = 2 days)
Day 1 - Introduction to FDA regulations, microbiology, container handling, food plant sanitation, and record keeping.
Day 2 - Glass closure evaluation, theory of thermal processing, instrumentation, and acidified foods.
Acidified and Low-Acid Food Certification (length = 3.5 days)
Days 3-4 - Detailed discussions of the various thermal processing systems and metal closure evaluation.

Course Schedule and Format

Tuesday 7:30 a.m. Registration at the Center for Continuing Education
Tuesday - Thursday 8:00 a.m. - 5:00 p.m. Classes begin at 8:00 a.m. each day. Following each lecture there will be a brief study period and time for questions. Exams will be given immediately after the study session. Lunch will be on your own
Friday 8:00 a.m. - 1:00 p.m. The school will end at approximately 1:00 p.m. on Friday

Faculty

    The course is taught by faculty from the Institute of Food Science and Engineering, University of Arkansas. Additional course instruction is provided by food industry consultants and FDA personnel.

Course Location

    All classes will be held at the University of Arkansas Center for Continuing Education on the Fayetteville Square.

Accommodations

    The Fayetteville Cosmopolitan Hotel (phone:479-442-5555) is adjacent to the Center for Continuing Education and provides an option for housing within walking distance. Other hotels in the Fayetteville area are all within easy driving distance of the Continuing Education Center. For those not staying at the Cosmopolitan, parking is available on the upper deck of the adjacent garage. To get to the garage's upper deck, go up the ramp that turns off of the alley between the Cosmopolitan and the parking garage.
