Dr. Denton has maintained an active career in food safety related activities during the past 34 years, including the 10-year period associated with his administrative responsibilities as Department Head and Director of the Center of Excellence for Poultry Science (CEPS). He has been instrumental in developing research and education programs targeted to multiple clientele groups including the poultry and meat industry, food service industry, consumer audiences, public schools and food and health professionals. He has served on the boards of directors and steering committees of many national and regional research and educational food safety organizations. He has served three terms (1992-1994, 1999-2000, 2002-2004) on the Secretary of Agriculture’s USDA National Advisory Committee for Meat and Poultry Inspection and has recently been appointed to a fourth term (2005-2007). He currently is serving as the Secretariat for the National Alliance for Food Safety and Security (NAFSS), and has served 4 years as the Chairman of the Board and Operations Committee for the NAFSS (a partnership of 19 universities and USDA-ARS), member of the Steering Committee for the Food Safety Consortium (University of Arkansas, Iowa State University and Kansas State University) and the Poultry Science Association (PSA) representative on the Board of Directors for the International HACCP Alliance. He has served on the National Chicken Council Animal Welfare Task Force and currently serves as the Chairman of the PSA Foundation Board of Trustees (2003-current). Dr. Denton’s prior administrative responsibilities include serving as Head of the Department of Poultry Science and Director of the CEPS at the University of Arkansas from July, 1992 until January, 2002.
