Sensory/Taste Panels;
The Sensory Evaluation Center is part of the Department of Food Science and the Institute of Food Science and Engineering. It is under the direction of Dr Han-Seok Seo (Saw) (479/575-4778; hanseok@uark.edu) . The Center can evaluate products using two types of taste panels. A descriptive analysis test is used to profile food products for their appearance, aroma, flavor and texture. Consumer tests are used for consumer acceptance of a product.
